The Farm

The arabica plantation of Valeriano Nalli (33) are a sea of green in the midst of the mountains of Capivara, rural Vargem Alta, in the mountainous region of that State. The crops are located more than 1000m above sea level and production on the farm are the results of the quality of the soil, the milder weather and the whim of the farmer; born in Castelo, in municipality boundary, 19km from the town of Vargem Alta.
The production of specialty coffee began ten years ago in Bateia (Castelo), where they established the family. Of Italian origin, the Nalli resisted the production of speciality coffee because they feared the increasing cost of labor. "The income was much smaller. Before we just threw the coffee on the floor and swept it up after drying. This produced an inferior cup with sacks selling for $1.50, which didn't even cover the cost of fertilizer," recalls Valeriano.
Nalli is now married with Josilenes Pin Fávero (27) and father of Thais (6), and it's in children that Nalli sees the future of his business.

The Montanhas do Espirito Santo, Brazil

The Montanhas do Espirito Santo region is dominated by small-scale coffee-growers and is characterized by the presence of farmers who are actively engaged in the entire chain of the production process. Growers in Espirito Santo work with family members and build off of traditional knowledge to innovate and improve their quality of life and coffee.
Located in the southern area of the Espirito Santo state, where mild temperatures (73ºF) and steep highlands (between 700 and 1,000 meters) favor growing Arabica coffees, this region produces a superb quality coffee with a round body, nice acidity, and fine sweetness. While the most common process for the region is Natural, Pulped Naturals are increasing in popularity.

Natural

Natural processing is the original manner in which all coffee was previously processed. The cherries are dried whole with the beans inside, just as one would dry a grape to produce a raisin. Over several weeks the pulp dries onto the parchment that surrounds the bean and as the sugars encourage fermentation, the flavour profile develops a fruity and bold character.
