Shembati

This is the third occasion we have worked with coffee from the Shembati washing station, overseen by Salum Ramadhan in the Kayanza region. Salum has created one of the most stringent quality control practices in Burundi, through years of hard work and training with the smallholder farmers that supply his mill. The cherries are sorted using floating tanks on arrival, before fermentation. Coffees from Shembati are processed using a Kenyan style double fermentation. After depulping, the parchment coffee goes through an approximately 12 hour dry fermentation, before being sorted again through floating, and separated into grades. Finally, the coffee goes through a wet fermentation, this time between 12 and 18 hours. One of the most exciting things about Shembati however, is that through all of this stringent processing, microlots are kept meticulously separated. This means that every year, we are able to cup though hundreds of lots from Shembati, from different micro-regions around the mill, different days pickings, and slight tweaks to fermentation. This kind of deliberate pursuit of quality is very exciting for us here at La Cabra, and is a big part of why we keep going back to Salum to buy Burundian coffee. The lot we have purchased this year has a clean and tea-like feel, with rooibos and floral honey aromas and a berry-like acidity.

Process
Washed

The washed process involves completely removing both the cherry and the mucilage from the outside of the parchment with the use of friction, fermentation and water. After being harvested, the coffee cherry is then sliced open by either a metal or a sharp plastic blade. The two seeds (also known as beans) are pushed out of the cherry, which leaves the seed with mucilage as their outermost layer. It is essential in the washed process that all mucilage is removed from the seed which leaves only the flavor that developed in the cell structure of the seed prior to processing.
