The Echeverry family

Elfren Echeverry’s family have always been involved in coffee. Following on from the family tradition, Elfren acquired Las Palmas two years ago. The farm gets its name from the natural banana palm forest that surrounds the farm, serving as natural shade for the coffee while producing a secondary product that the family can sell. This dedication to biodiversity continues with a large number of Guadua trees, an American species of bamboo. These can be used as building materials, but also help to store water for the dry season, and contribute to native biodiversity. The Echeverry family are committed to preserving biodiversity and native species, as it brings them benefits both in the field and in the quality of their coffee.

Natural Pink Bourbon

Elfren made a decision to pursue quality when purchasing his farm, planting exotic varieties such as Pink Bourbon and Geisha. He also experiments with innovative processes, with several different anaerobic fermentation protocols used on the farm. This lot is a natural Pink Bourbon from Las Palmas, pre-fermented in closed tanks to create a rich and heavy expression of the varietal, with a focus on the sweetness and ripe tropical fruit notes.

Hulia

Elfren grows coffee near the town of Palestina in southern Huila, one of the most renowned growing regions in Colombia. Huila’s volcanic soils, undisturbed by the intensive agriculture seen further north, are full of nutrition, and alongside high altitude, lead to excellent conditions for producing high quality coffees. We also see a great number of driven and agile small farmers here, many of whom have family history in coffee, but haven’t necessarily been working on the same large industrialised farms for generations, like we see in more established coffee regions. This leads to a willingness to experiment, to innovate, and create lots that fulfil ever changing needs in the speciality coffee market.

One example of this is Pink Bourbon, said to be a natural mutation discovered in Huila, an exotic varietal that exhibits crisp and clean aromatic character, often with floral and tropical elements.

Natural Process

The natural, or dry process, is the traditional process, going back generations. When accomplished in a controlled and careful manner, dry processed coffees can produce flavour experiences not found in wet processed coffees, deep fruits and florals, normally with heavier mouthfeel and lower acidity. The cherries are first sorted, and then laid out on in thin layers (2-6 cm) on raised drying beds. These are almost always used for high quality naturals, as they aid airflow around the coffee as it dries, enabling more even drying. 

It is very important that coffees are sorted very carefully early on in the drying process, as all of the cherries quickly turn dark brown, making it impossible to separate under and overripe cherries. The cherries are turned frequently to avoid mold formation or over-fermentation, until they reach a moisture content of below 20%, and the outer cherry layer shrinks and blackens. This process takes between 2 and 4 weeks, depending on weather conditions.
