Highlights of Guatemala
These lots, by Antonio Gonzalez in Fraijanes and Antonio Medina in Chimaltenango, are a great illustration of potential and diversity in Guatemalan coffee. Two contrasting and high quality flavour profiles, La Colina is fresh and floral, while Nueva Montaña showcases a wilder fruit-driven character.


Washed Geisha
This lot is a great illustration of Tony’s years of experience. Even before planting, Tony was aware of the great level of care the Geisha plant requires, and has slowly become accustomed to how the plant acts and what it needs when growing here. Ripe cherries from his Geisha plot are transported to the wet mill and de-pulped, before fermenting in tanks for 32 hours. This long and slow fermentation is typical at these high altitudes in Guatemala, creating a great deal of complexity and a soft overall cup profile. Here, we find deeply complex florals of jasmine and magnolia, and a soft cup profile reminiscent of lemon balm with a poached fruit sweetness.
Natural Maracaturra
This particular lot is of the Maracaturra varietal, a cross between Maragogype, known for its large bean size, and the more widely used Caturra. They see their focus on these high end lots as a learning opportunity, allowing their experience to trickle down and improve the rest of their work. This lot is a great example, pre-fermented in sealed plastic bags overnight for 14 hours, ready to be laid out on raised beds to dry the next day. This pre-fermentation gives a much greater deal of control over the final result, consuming a great deal of sugar under controlled conditions, before the cherries are laid out to dry open to the elements. The anoxic conditions also favour a bacterial fermentation, leading to the formation of lactic acid, and reducing the risk of yeast-driven alcoholic fermentation and the ‘boozy’ flavours it brings. The fermentation of this lot holds onto a juicy profile, with notes of ripe blueberry, while adding complex aromatics of violet atop a rich brown sugar sweetness.

Washed Process
The washed process involves completely removing both the cherry and the mucilage from the outside of the parchment with the use of friction, fermentation and water. After being harvested, the coffee cherry is then sliced open by either a metal or a sharp plastic blade.
The two seeds (also known as beans) are pushed out of the cherry, which leaves the seed with mucilage as their outermost layer. It is essential in the washed process that all mucilage is removed from the seed which leaves only the flavour that developed in the cell structure of the seed prior to processing.
