In den Chargen von Anyi ist das Engagement für Qualität während des gesamten Produktionsprozesses deutlich zu erkennen. Sorgfältig werden die geernteten Kirschen noch am selben Tag des Pflückens geschwemmt, um die unreifen und mangelhaften Kirschen vor dem Auflösen des Fruchtfleisches voneinander zu trennen. Der enthüllte Kaffee wird vor dem Waschen 24 Stunden fermentiert und dann langsam für 20 Tage unter den Kunststoff-Paraboltrocknern getrocknet.

Anyi Gomez

Anyi Abigail Gomez has been involved in coffee production all her life. Growing up on her father Hernan Gomez’s farm, she was always around each step of the process, gaining experience all the way from the tree to exportable specialty lots. Hernan is well thought-of in the area, and has been producing quality coffee for many years. A couple of years ago, Abigail inherited about a hectare of land from her father, a gift in order to help her save for her studies. Abigail’s experience has led to high quality coffee from the start, in only her second harvest from her own plot.

Washed Process

The washed process involves completely removing both the cherry and the mucilage from the outside of the parchment with the use of friction, fermentation and water. After being harvested, the coffee cherry is then sliced open by either a metal or a sharp plastic blade.

The two seeds (also known as beans) are pushed out of the cherry, which leaves the seed with mucilage as their outermost layer. It is essential in the washed process that all mucilage is removed from the seed which leaves only the flavour that developed in the cell structure of the seed prior to processing.
