This month's theme
- This month, we’re excited to sharing two washed lots from the Huehuetenango region, illustrating the variance of profiles we find here.
- Huehuetenango is a beautiful and isolated region in the north of Guatemala, next to the border with Mexico.
- The varying micro-climates and high altitude, alongside the many production routines followed on the hundreds of small farms here, lead to a great variance in flavour profiles.
COFFEES
- Sebastiana Gaspar has a more fruit-forward profile with notes of stone fruit and cascara, enhanced by a further soaking after washing, similar to that used in Kenya.
- Baltazar Mendez has a very clean and crisp profile, with a grape-like acidity and toffee-like sweetness, brought about by the more traditional processing.

The changing seasons and themes
The selection for Discovery is curated by our team in the roastery, following the seasonal harvest patterns across the coffee belt. We source Discovery coffees with intent, creating balanced experiences that illustrate important concepts from the world of coffee. Expect two varietals from the same farm, two contrasting experiences from the same region, or an exploration of processing.
What did you miss?
Last month’s coffees expressed two different aspects of the Ethiopian flavour profile, a ripe and floral natural, and a wild and fruit driven Anaerobic.
Both of last month’s lots were processed at SNAP Coffee’s washing station in the town of Buku Abel, located in the Hambela area of Guji. During our trip to Ethiopia in February, we cupped several tables of excellent coffees from this year’s harvest at SNAP’s headquarters in Addis Ababa, and visited their dry mill outside the city. SNAP was established in 2008 by Negusse Debela, and now operates washing stations across Ethiopia; in the Gedeo zone, in Guji and in West Arsi.
We were truly impressed by SNAP’s attention to detail during our visit, at their dry mill and at the quality lab. This dedication translates both to the stations in the growing regions, and into the cup. This month’s coffees express two different aspects of the Ethiopian flavour profile, a ripe and floral natural, and a wild and fruit driven Anaerobic.
